Cupcakes and italian food.
I can't seem to get enough of them. I've tried to make cake balls but somehow they don't like me, they taste like butter (which I don't like) and they are so, greasy and ugh, I simply can.. So I'll be forever loyal to cupcakes. Cupcakes somehow turn my bad days to good ones, somehow they manage to make everything a little better and brighter! They can never turn out to be ugly, if you follow Betty Crocker's instructions (thank God a thousand times for that woman!) everything will be okay. They problem could possibly rely in the frosting, as soon as you get there you have two options: the old and trust worthy Betty Crocker or pillsbury frosting or making your own. I prefer making my own buttercream since it's cheaper and I make A LOT of cupcakes. Here's my favorite recipe: In a large bowl cream together 1 cup of salted butter (2 bars) at room temperature and 3 cups of powdered sugar at low speed, when it's creamy enough add 1 teaspoon of whipping cream and 1 or 2 tablespoons of vanilla (or almond) extract. If you follow this easy steps you'll fall in love with this buttercream and you'll never manage to stop making it.
I hope you try and most of all enjoy it, never forget cupcakes are meant to be fun! (or at least that's what I think).
Have a nice sunday and hopefully expect more posts!
